Summer Passport: Grilling with Borje Salming

As part of Summer Passport we’ll be bringing you the tastes of the countries featured with some very delicious recipes.

To celebrate Sweden we have an awesome recipe from Sweden’s “King of the Barbeque”, Borje Salming. Below, you’ll find out how to make Bacon-Wrapped Cod with Red Wine Sauce, a dish featured in his cookbook, Grilling with Salming.

Bacon-Wrapped Cod with Red Wine Sauce

Cod is a firm but lean fish. Wrapping it in bacon gives it a delicious bite and helps it hold together well on the grill. Red wine sauce and sautéed new potatoes provide the perfect accompaniment.

Serves 4

4 cod fillets, approx. 1 1/2 lb (750 g) total
8 slices bacon
Flaked sea salt (or kosher salt), to taste
Freshly ground black pepper, to taste


1 shallot
1 small carrot
1 slice bacon
1 tbsp (15 mL) plus 1 tsp (5 mL) butter, divided
2 tbsp (30 mL) tomato paste
1 cup (250 mL) red wine
2 cups (500 mL) beef stock
3 tbsp (50 mL) cornstarch
Pinch brown sugar
Salt, to taste
Freshly ground black pepper, to taste
Toothpicks, soaked approx. 10 minutes

1.  Mince shallot and carrot. Thinly slice bacon crosswise.

2.  Melt 1 tbsp (15 mL) butter in saucepan. Add shallot, carrot and bacon and sauté over medium heat until shallot is translucent but not brown.

3.  Stir in tomato paste to combine and cook for about 1 minute.

4.  Add wine and stock and bring to a boil. Reduce heat to medium and cook until reduced by half.

5.  Strain remaining sauce. Return to stove and bring to a gentle boil. Whisk in cornstarch to thicken. Season with sugar, salt and pepper. Add remaining butter and stir to blend; keep warm.

6.  Wrap 2 pieces of bacon around each cod fillet. Secure with toothpicks. Grill over medium heat for 8 to 10 minutes. Move fish toward outside of grill if bacon begins to burn.

7.  Serve with sauce, sautéed new potatoes, and blanched green beans.
